The FSMP curriculum contains courses in foods and nutrition, foodservice management, hospitality management, and general education. Students learn to plan and cost nutritious menus, purchasing standards and procedures, hiring, training and supervision of personnel, and sanitation and safety, marketing, and events planning.
Two foodservice management courses are offered in conjunction with the Educational Foundation of the National Restaurant Association. Students become nationally certified in Safe Food Handling (Servsafe Certification), and Controlling Foodservice Costs as part of their course requirements. Students complete their studies in general education through the completion of coursework in biology, English, humanities, and social sciences.
The FSMP is dedicated to supporting students in the completion of a professional ePortfolio which can support a student’s transfer process and /or employment application. Students are required to save all of their written work in the program on a digital device (i.e. thumb drive) for easy upload of assignments into their ePortfolio. Technical support is provided to students throughout the program.
The FSMP requires students to complete one internship course as part of their degree requirements. This experience provides students with an opportunity to participate in the daily operation of a foodservice department in a commercial establishment. Students directly apply the knowledge received in their courses to practical experiences at the work site. Students are NOT paid while completing their fieldwork experience.
